Rich mahogany color with hints of clove, spicy phenolics, and fruity esters in the nose. Rich mouthfeel with complex dark stone fruit flavors and a hint of spicy clove with just the right amount of hop bitterness and a slightly sweet finish.

Our Process Open Fermentation

For a handful of our German-style beers, and all of our Belgian-style beers, we use open top fermenters. These fermenters aren't shaped like a traditional conical fermenter. They have a wider diameter with a saucer-shaped bottom and no top, leaving it open to the air. This shape puts less hydrostatic and barometric stress on the yeast. When specific strains of yeast are exposed to open air, they express a more intense range of esters and phenolics.
