For a handful of our German-style beers, and all of our Belgian-style beers, we use open top fermenters. These fermenters aren't shaped like a traditional conical fermenter. They have a wider diameter with a saucer-shaped bottom and no top, leaving it open to the air. This shape puts less hydrostatic and barometric stress on the yeast. When specific strains of yeast are exposed to open air, they express a more intense range of esters and phenolics.
